Ingredients
01. Pomfret Fish (whole) -  ½ kg
02. Celery (chopped fine) -  4 tsp
03. Garlic (chopped fine) - 1 tsp
04. Red chillies (chopped fine) - 1 tsp
05. Mango ginger (grated) - 2 tsp
06. Fish sauce - 1 tbsp
07. Sugar - 1 tbsp
08. Salt - to taste
09. Lemon juice - 1 tsp
10. Oil - 2 tsp
Preparation
01. Clean the fish well, wash and keep it wrapped in a paper towel for 10 minutes. (This is done to make sure that it is absolutely dry)

02. Now mix the celery, garlic, red chillies, mango ginger, fish sauce, sugar,salt lemon juice and oil well. Apply this mixture thoroughly on the fish, both inside and outside.

03. Wrap this fish securely in a banana leaf and leave undisturbed for four hours to marinate.
04. Next, steam the fish, with the banana leaf, in a steamer till it is well cooked. This will take approximately eight to ten minutes. Serve hot.
