This is a crowd pleaser and easy to make.

 
 
Ingredients
1. Butter - 50 g
2. Leeks - 575 g (cut into small pieces)
3. Onions - 2 (chopped)
4. Celery - 3 sprigs (chopped)
5. Potato - 1 (chopped)
6. Parsley - 1 tbsp (chopped)
7. Chicken or vegetable stock - 1 ½ l
8. Salt and white pepper powder - to taste
9. Double cream - 150 ml
Preparation
1. Heat butter in a heavy based saucepan.
2. Keep aside a small sprig of leeks and chop the remaining. Add the chopped leeks, onions and celery in the pan and cook on a low fire for 10 to 15 minutes till it become soft.
3. Add potato and stir on a low fire till the butter melts. Add parsley to it and then add stock and stir.
4. Add pepper powder and salt as needed and cook covered for half an hour till the vegetables get cooked.
5. Take it off the fire. Grind when cool.
6. Add cream and heat on a low fire.
7. Remove from fire. Add the chopped raw leeks and stir before serving.
