Mango Pudding

Summer is here and so are mangoes – the king of fruits. What could be a better time for relishing juicy succulent sweet mangoes in a cool, soft cream


1.  Mango pulp - 1 ½ cups

2. Sugar - ¾ cup
    Water - ¾ cup

3. Gelatin - 1 ½ tbsp
    Water - 4 tbsp

4. Egg white - of 3 eggs
    Sugar - 4 tbsp

5. Whipped cream - ½ cup
6. Pieces of mango, roasted cashew nuts and cherries - To decorate

1. Cook the sugar and water to syrup. Add the mango pulp and keep stirring to a delicious looking custard form.
2. Soak the gelatin in water and dissolve by immersing in a pan of hot water.
3. Mix the gelatin in the mango custard and once the mix cools, spread onto a well greased dish and refrigerate.
4. Take out the dish once the pudding mix partially sets in.
5. Whip the egg whites, add the sugar part by part and continue whipping till it becomes thick.
6. Now add the cream to the mango mix, slow and easy followed by the whipped egg white.
7. Dress the pudding with piped cream, roasted nuts and cherries.
8. Serve cool. Watch the kids smack their lips!
