Lemon Pudding

Are you fed up with the usual ice cream for dessert? Are you on the look out for something different? Here’s something new to challenge your taste bud

1. Sugar - 200g
2. Salt less butter - 40 g
3. Eggs  - 3 Nos
4. Vanilla essence - 1 tsp
5. Lemon peel (grated) - 1 tbsp
6. Flour -  45 g
7. Salt - 1 tsp
8. Lemon juice - 80 g
9. Milk - 240 ml
10. Cream of tartar -1 pinch

1. Preheat oven at 170?C.
2. Blend the sugar and butter in the mixer, but keep aside 2 tablespoons of sugar separately.
3. Separate the egg white and yolk and add the egg yolks one by one to the sugar – butter mix, followed by the vanilla essence, grated lemon peel and then the flour sifted with salt. It is important to beat the mix after each ingredient has been added. This helps to get a smooth blend.

4. Slow the mixer speed and slowly add the lemon juice and milk.
5. Whip the egg whites in a separate bowl along with the cream of tartar till it foams.
6. Pour this out slowly into the mix prepared in the mixer.
7. Grease the serving bowls with butter and pour out spoonfuls of the pudding mix into them.
8. Now for the fun. Arrange the bowls in a dish of water so that the bowls are half immersed in the water. Bake in oven for 40 – 45 minutes.
9. Sprinkle sugar, add a dab of cream and lo! your saucy lemon pudding is ready to savour!
